This fried chicken jalapeno ranch pizza is a fried piece of heaven. Layered with fried chicken, jalapenos and mozzarella cheese on top of arguably the best sauce in the world, ranch. Pickled and fried, two of the best things around town, why not put em’ together.
At first glance it appeared to be too much of a good thing. But the end results were a comforting home-style fried chicken plus the fried warmth of the sneaky jalapeno pepper. Also adding a much needed touch of freshness to this incredible fried chicken jalapeno ranch pizza. The melted mozza melds the ingredients together, but you can’t forget the classic ranch flavor carrying the fried goodness to yes….I already said it….but ima say it again….heaven!

Fried Chicken Jalapeno Ranch Pizza

Ingredients
TOPPINGS
- 1½ cups FRIED CHICKEN instructions below
- 1 cup FRIED PICKLED JALAPENOS instructions below
- 2 cups MOZZARELLA CHEESE
FRIED CHICKEN
- 4 pieces BONELESS CHICKEN THIGHS
- 2 cups BUTTERMILK
- 2 cups FLOUR for dredging
- 1 tsp PAPRIKA
- 1 tsp GARLIC POWDER
- 1 tsp ONION POWDER
- 1 tsp SALT
- 1/2 tsp THYME
- 1/2 tsp CAYENNE
- 1/2 tsp PEPPER
- OIL for frying
FRIED JALAPENOS
- 1 cup PICKLED JALAPENOS
- 1/2 cup FLOUR
- 1/2 cup WATER
- 1 EGG
- 1 tsp GARLIC POWDER
- 1 tsp ONION POWDER
- 1 tsp CHILE POWDER
- 1 tsp SALT
- OIL for frying
SAUCE
- 1 cup RANCH
WILD DOUGH
- 2 cups SOURDOUGH STARTER
- 1 cup BREAD FLOUR
- 1 tsp SALT
Instructions
FRIED JALAPENOS
- In a large bowl mix together flour, water, egg, garlic powder, onion powder, chile powder and salt. Then add pickled jalapenos.
- Heat oil in wok or large frying pan to medium heat. One by one add the jalapenos, cook for a few minutes, until golden brown. Drain on paper towel.
FRIED CHICKEN
- In a large mixing bowl add buttermilk, paprika, garlic powder, onion powder, salt, thyme, cayenne, pepper, mix well, then add chicken and marinate for 30 minutes.
- Heat oil in a wok or large frying pan on medium heat.
- Dredge chicken in flour and fry 6-8 minutes each side, or until done.
- Remove chicken and drain on paper towel, once cooled chop chicken.
PIZZA
- Preheat oven to 550 degrees with baking steel or pizza stone inside the oven for 1 hour.
- Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 1 minute . Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour.
- Flour surface and roll out the dough. Put a floured pizza peel under the dough.
- Grate mozzarella cheese.
- Add sauce, cheese, chicken and jalapenos. Pat down the toppings before putting into the oven.
- Bake pizza in the oven at 550 degrees for 8-10 minutes.
- Remove pizza from oven and let cool for 5 minutes.
