HOLY CHICKEN! For some reason holy chicken just doesn’t sound nearly as cool as holy cow. But that doesn’t even matter right now, because this Holy Trinity Cajun Chicken Pizza is kickin’ butts all over town! Big bold flavours and a decent amount of heat, not to mention the classic slightly burnt chicken but its OK cause it’s cajun flare.

The best part of this pizza has to be the amazing mix of flavour not only from the heavily spiced chicken but the all mighty holy trinity. Green pepper, celery and onions sautéed until the smell has filled the house and you just cant take it anymore… and you know the only thing left to do is get a slice of this miraculous Holy Trinity Cajun Chicken Pizza.

  • 2 cups Cajun Chicken instructions below*
  • 2 cups Holy Trinity instructions below*
  • 2 cups Mozzarella cheese
  • 1 cup Tomato sauce

WILD PIZZA DOUGH

  • 2 cups Sourdough starter
  • 1 cup Bread flour
  • 1 tsp Salt

CAJUN CHICKEN*

  • 4 Chicken thighs boneless, skinless
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ¼ tsp Cayenne pepper
  • Cooking oil

HOLY TRINITY*

  • 3 stalks Celery
  • 1 Onion
  • 1 Green bell pepper
  • ¼ cup Cooking sherry
  • 1 tsp Salt
  • ½ tsp Black pepper
  • Cooking oil

Instructions

WILD PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

CAJUN CHICKEN*

  • Make cajun seasoning: mix together oregano, thyme, onion powder, garlic powder, paprika, cayenne pepper, salt and pepper. Rub chicken with seasoning and marinate for 30 minutes.
  • Cook chicken in cast iron pan (or any frying pan, cast iron just gives meat a better sear) for 5-7 minutes, each side until no longer pink inside (internal temperature of 165°F). Remove chicken, let cool slightly and slice.

HOLY TRINITY*

  • Chop celery, onion and green pepper. Cook in cast iron pan for 8-10 minutes, stirring often. Deglaze by adding ¼ cup of cooking sherry and cook for another 2-3 minutes. Remove from pan and set aside.

PIZZA

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add tomato sauce, then mozzarella cheese, then holy trinity, and chicken. Pat down toppings.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!

Down where it’s better, this Popcorn Shrimp Pizza comes straight out of a fairy tale. Delicious panko breaded shrimp baked to a crispy delight. On a base of classic tomato sauce and mozzarella cheese these little shrimps deliver in a big way.

Not everyones a fan of seafood on a pizza, I hear that, especially heating it up in the work microwave, not cool. But forget work for a minute and let’s talk shrimp. Not only are these tasty little shrimp awesome but to lighten things up a bit added some fresh chopped parsley for another layer of flavour.

  • 1 cup Panko breadcrumbs
  • ½ cup Flour

  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Thyme
  • ½ tsp Black pepper

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. If it's too dry you can add a little water. Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

PIZZA

  • Preheat over to 400°F.
  • Deschell and devein raw shrimp.
  • Get 3 mixing bowls. Add flour, garlic powder, onion powder, paprika, oregano, thyme, salt and black pepper to mixing bowl #1. Add egg to a mixing bowl #2 and mix lightly. And add breadcrumbs to mixing bowl #3.
  • Add shrimp to flour mixing bowl and coat evenly. Then add shrimp to egg mixing bowl and coat evenly. Finally add shrimp to the breadcrumb mixing bowl coating evenly. Then put shrimp single file onto a parchment paper lined baking tray and bake @400°F for 5 minutes. Flip shrimp and cook an additional 5 minutes, remove from oven.
  • Turn up the oven temperature to 550°F.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough. Add tomato sauce to pizza, then top with mozzarella cheese. Add popcorn shrimp. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550°F. for 8-10 minutes. Let cool 5 minutes then slice it up!

  • 1 cup Cheddar cheese
  • ½ cup Cream
  • 1 tbsp Butter
  • 1 tsp Flour
  • ¼ tsp Salt
  • tsp Black pepper

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

PIZZA

  • Bake bacon in oven on parchment paper lined baking pan at 420 degrees F. for 15 minutes, then flip. Cook bacon an additional 5 minutes, or until cooked (make sure not to overcook it because it will be cooking in the oven for an additional 10 minutes on the pizza). Remove bacon and drain on paper towel lined plate.
  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese, dice onions, slice hot dogs lengthwise for a total of 8 hot dog slices.
  • MAKE CHEESE SAUCE: Grate cheddar cheese.
    Heat large pot to medium and melt butter, whisking constantly. Add flour and whisk 30 seconds. Add cream and whisk to mix well, then add cheddar cheese, salt and pepper.
    Bring to a boil, then turn off the heat and let cool. Reserve 1 cup of cheese sauce for the pizza sauce.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough. Add cheddar cheese sauce, mozzarella cheese, 8 bacon slices, then lay hot dogs slices on top of the bacon slices. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550 degrees F. for 8-10 minutes. Add some grated cheddar cheese if you want it even more cheesy. Let cool 5 minutes then slice it up!

Doesn’t seem like we should have done it… but we did. Carbs on carbs on carbs, somehow this grilled cheese pizza recipe was still really awesome. Ooey gooey cheddar cheese from the itty bitty grilled cheese strategically placed around the pizza on a bed of ketchup, of course. And if you haven’t tried a sourdough grilled cheese, get on it! What are you waiting for, finish reading this, then watch the video… then… go and make a sourdough grilled cheese.

But that’s not it my friends, we added some mozzarella cheese just for good measure. Not only underneath the tasty little grilled cheese minis, but we loaded some on top too, because why the heck not. What’s great with grilled cheese and ketchup, well more cheese, obviously.

  • Remove crust from 4 slices of sourdough bread and roll bread with rolling pin. Cut 4 slices of cheddar cheese. Add 1 tbsp. butter to outside of bread slices. Build cheese sandwich and cut into 12 little squares. Repeat with second sandwich.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
  • Add ketchup to pizza, then 1 cup mozzarella cheese, then 24 mini grilled cheese squares, finally add 1 more cup of mozzarella cheese. Pat down.
  • Bake pizza at 550°F for 8-10 minutes, by sliding pizza onto baking steel with pizza peel.
  • Remove pizza from oven with pizza peel. Let cool for 5 minutes, slice and enjoy!

Edamame Pizza? We know what you’re thinking, has Papa Za lost his mind, or has he just ran out of pizza ideas?… Far from it my friends. This Edamame pizza recipe recipe may be pretty far out there, but it can get right in our belly any day of the week. Make sure you don’t eat those shells though, some say they’re poisonous and some say they’re just too darn tough to eat, either way, we say good-day to you Edamame shells!

Something special happens when you aggressively season these delightful little pods. And things really kick up the jams when you make our edamame sauce. Garlic, sesame oil, red crushed pepper and of course our good pal soy sauce. Weird pizza this may be but it still reigns supreme soybean!

Ingredients

TOPPINGS

  • 2 cups Mozzarella cheese
  • cup Edamame pods instructions below*
  • cup Edamame sauce instructions below*

WILD PIZZA DOUGH

  • 2 cups Sourdough starter
  • 1 cup Bread flour
  • 1 tsp Salt

Edamame Pods*

  • 2 cups Shelled Edamame 300g
  • ½ tsp Salt
  • ¼ tsp Black pepper

Edamame Sauce*

  • ¼ cup Sesame oil
  • 2 tbsp Soy sauce
  • 1 tbsp Garlic 3 cloves
  • 1 tsp Crushed red pepper

Instructions

WILD PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, salt, and bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky).
  • Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

Edamame Pods*

  • Boil shelled edamame for 5 minutes in large pot of water. Drain and cool. Remove pods from the shells. Discard the shells and season the pods with salt and pepper. Reserve 1½ cups and set aside.

Edamame Sauce*

  • Mince garlic and add to a bowl. Add soy sauce, sesame oil, red crushed pepper, and mix well.

PIZZA

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
  • Add edamame sauce to pizza, then mozzarella cheese, then edamame pods. Pat down.
  • Bake pizza at 550°F for 8-10 minutes, by sliding pizza onto baking steel with pizza peel.
  • Remove pizza from oven with pizza peel. Let cool for 5 minutes, slice and enjoy!
