PAPA ZA’S KITCHEN
First and foremost to all the traditionalist out there, it’s really hard to find grits. But if you’re in a pinch you can still make some amazing cheesy grits with cornmeal. We’ve seen a lot of people substitute cornmeal for grits, although it’s not exactly the same. But ya know what, its still super good it’s just a slight difference in the texture, but if ya cook it right you’re in a good place.
Grits or cornmeal will both work in this recipe so don’t worry about it if ya can’t stay traditional with it. We are the furthest thing from traditional anyways, so the glass slipper fits and cornmeal can still makes some excellent grits. Cheesy grits for the win, and adding bacon and shrimp can really elevate this dish.
- ½ cup Grits (or cornmeal)
- 1 cup Water
- 1 cup Milk
- ¼ cup Cheddar cheese
- 2 tbsp Butter
- 1 tsp Salt
- ½ tsp Black pepper
- In saucepan, bring milk and water to boil over medium heat, whisk often. Slowly whisk in grits then turn heat to low and cover.
- Remove lid every 5 minutes to whisk. Cook for a total of 20 minutes or until creamy.
- Remove from heat, add salt, pepper and butter then whisk. Add cheese and whisk until smooth. Serve warm.
