Buffalo Chicken Pizza Recipe… with a twist

We have taken the classic Buffalo chicken pizza recipe to a new level, by adding all the right things Buffalo chicken pizza recipeto a plate of buffalo wings, minus those pesky bones. What Buffalo chicken pizza recipe would be complete with not only one dipping sauce. But two!  We decided to use ranch dressing as the base and we threw some blue cheese on it. Now this may have gone to far for some but that’s OK, we like to go the extra mile.

Not only does this Buffalo chicken pizza have ranch and blue cheese, but we thought we would need to add a little bit more to really make it official.  Normally you would get carrot sticks or celery with your Buffalo wings but we went rogue, we went pepperoncini’s! The clear winner and decided champ for this bad mamma jamma, who doesn’t some extra kick on their pizza! So kick some butt and grab a slice of this Buffalo chicken pub style special.

Buffalo Chicken Pizza

Ingredients

TOPPINGS

  • 2 cups Buffalo chicken instructions below*
  • 2 cups Mozzarella cheese grated
  • ¾ cup Ranch dressing
  • cup Blue cheese
  • ¼ cup Pepperoncini sliced

WILD PIZZA DOUGH

  • 2 cups Sourdough Starter active
  • 1 cup Bread flour
  • 1 tsp Salt

Buffalo Chicken*

  • 5 Chicken thighs boneless
  • ½ cup Hot sauce
  • ¼ cup Butter melted
  • ½ tsp Garlic salt
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 1 tbsp Oil

Instructions

WILD PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550 degrees F° after you finish making your pizza dough)

BUFFALO CHICKEN*

  • In a large bowl add hot sauce, melted butter and garlic salt, mix buffalo sauce.
  • Oil and season chicken thighs with salt and pepper. Bake @ 420 degrees F° for 8 minutes each side, or until no longer pink inside. Remove from oven, and let chicken rest 5 minutes. Chop chicken and toss in the sauce.

PIZZA

  • Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Crumble blue cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Add Sauce, then cheese, then remaining toppings (removing Buffalo chicken from bowl with slotted spoon). Pat down.
  • Bake pizza in the oven at 550 degrees F° for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5+ minutes.

  • Make your dough by mixing the sourdough starter, bread flour* and salt together
    *adding a bit of flour at a time until it takes shape but is still a little sticky. Knead the dough for 30 seconds.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550 degrees F° after you finish making your pizza dough)

PIZZA

  • Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Open can of Alphagettis.
  • Flour surface and roll out the dough, flour lightly as needed. Add ¾ can of Alphagettis. Add mozzarella cheese. Pat down toppings.
  • Bake pizza in the oven at 550 degrees F° for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5+ minutes.

SAUCE

  • 1 cup BBQ Sauce

WILD DOUGH

  • 2 cups Sourdough Starter
  • 1 cup Bread Flour
  • 1 tsp Salt

Pulled Pork

  • 5 lb Pork Picnic Shoulder
  • 1 cup Water
  • ½ cup BBQ Sauce
  • 1 tbsp Mustard ground
  • 1 tbsp Oregano dried
  • 1 tbsp Cumin ground
  • 1 tbsp Garlic Powder
  • 1 tbsp Paprika
  • 1 tbsp Chile Powder
  • ½ tbsp Salt
  • ½ tbsp Pepper ground

Coleslaw

  • 1 Carrot peeled and grated
  • ¼ head Red Cabbage shredded
  • ½ cup Mayonnaise
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Paprika
  • ½ tsp Chile Powder
  • ½ tsp Celery Seed
  • ½ tsp Salt
  • ½ tsp Pepper ground

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550 degrees after you finish making your pizza dough)

Pulled Pork (1½ hours)

  • In a small bowl mix together mustard, oregano, cumin, garlic powder, onion powder, paprika, chile powder, salt and pepper.
  • Rub pork with spice mixture and cook for 1½ in an Instapot, on pressure cook setting.
  • Remove pork from Instapot and shred with two forks in a large mixing bowl. Add BBQ sauce and mix well, set aside.

Coleslaw (5 min)

  • Peel and grate carrot. Quarter cabbage, remove stock and shred cabbage. Add carrot and cabbage to a large mixing bowl and add mayonnaise, garlic powder, onion powder, paprika, chile powder, celery seed, salt and pepper, mix well and set aside.

PIZZA (8-10 min)

  • Preheat oven to 550 degrees F. with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough. Add sauce, cheese, and toppings. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550 degrees F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes.

I don’t think you can get anymore Christmassy on a pizza than this. I know what your’e thinking, where’s the damn Turkey? Isn’t this a Christmas Pizza?!

But I say “HEY”, Turkey is for Thanksgiving and even though I usually have both for Christmas, Thanksgiving won Turkey, so Christmas wins Ham!  So deal with it… and Merry Christmas, Happy Holidays everyone!

Ingredients

TOPPINGS

  • 12 Brussel Sprouts halved
  • 9 Cocktail Cherries halved

SAUCE

  • 1 cup Dijon Rum Sauce

WILD DOUGH

  • 2 cups Sourdough Starter active
  • 1 cup Bread Flour
  • 1 tsp Salt

Rum Ham

  • 5 lb Smoked Ham Shoulder
  • 4 cups Water
  • 40 Whole Cloves
  • 4 Sprigs of Thyme

Rum Glaze

  • cup Brown Sugar
  • ½ cup Spiced Rum
  • ½ tbsp Cinnamon
  • ½ tsp Nutmeg
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ cup Cherry Syrup
  • 1 tbsp Cornstarch
  • ¼ cup Water cold

Dijon Rum Sauce

  • ½ cup Rum Glaze
  • ½ cup Dijon Mustard

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550 degrees after you finish making your pizza dough)

Rum Ham (3½ hours)

  • Remove stems and halve brussel sprouts.
  • Remove netting from the Smoked Pork Shoulder. Diagonally score the ham with a knife, and insert whole cloves.
  • In a large roasting pan insert a rack, add the ham, thyme and water. Bake @375° F. for 2 hours.
  • Make rum glaze by mixing together spiced rum, brown sugar, cinnamon, nutmeg, cherry syrup, salt and pepper.
  • Add the brussel sprouts to the roasting pan, and pour half of the glaze onto the ham. Bake for another 30 minutes.
  • Stir the brussel sprouts, pour the remaining glaze on the ham and cook for another 30 minutes.
  • Remove ham from oven (ensure internal temperature is 145° F.) and let rest for 30 minutes. Slice ham into thin 1" x ¼" strips. Remove brussel sprouts.
  • Remove stems from cocktail cherries and halve.

Dijon Rum Sauce (10 min)

  • Strain liquid from roasting pan into a pot and bring to a boil. Mix cornstarch and cold water together, then add to pot. Bring to a boil and reduce until desired consistency.

PIZZA (8-10 min)

  • Preheat oven to 550 degrees F. with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough. Add sauce, cheese, and toppings. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550 degrees F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes.
