Buffalo Cauliflower Pizza

Awesome flavor with a little kick, this Buffalo cauliflower pizza is just about perfect. Tasty battered and baked cauliflower covered in Buffalo sauce, tangy and hot in all the right places. Did you know that cauliflower is also a type of cabbage?

But what makes this pizza really work is the combination of Buffalo cauliflower with ranch. Ranch, the best sauce in the world and cauliflower, the second best tree shaped vegetable. Broccoli is the first but you already knew that. Not sure if Buffalo broccoli would hold up as well as cauliflower. I guess there’s only one way to find out, but before you do give this pizza a shot because it’s one of our favourite pizzas so far!

Ingredients

TOPPINGS

  • 2 cups Buffalo Cauliflower instructions below*
  • 2 cups Mozzarella cheese
  • 1 cup Ranch

SOURDOUGH PIZZA DOUGH

  • 2 cups Sourdough starter
  • 1 cup Bread flour
  • 1 tsp Salt

Buffalo Cauliflower*

  • 1 head Cauliflower
  • 1 cup Milk
  • ¾ cup Flour
  • ¼ cup Hot sauce
  • 2 tbsp Cooking oil
  • 1 tbsp Honey
  • 1 tbsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • ½ tsp Black pepper

Instructions

SOURDOUGH PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, salt and bread flour together (adding a bit of flour at a time until it takes shape)
  • Knead the dough for 30 seconds, flour lightly as needed or add a little water if it's too dry.
  • Place the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour (the baking steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA

  • Preheat oven to 450°F.
  • In large bowl add flour, garlic powder, paprika, salt, pepper and milk. Whisk until smooth.
  • Chop cauliflower into bite-sized pieces, removing the core and leaves then add cauliflower to batter and coat evenly.
  • Add cauliflower to parchment paper lined baking pan and bake @ 450℉ for 10 minutes. Flip and bake another 10 minutes. Remove from oven, coat cauliflower with Buffalo sauce and bake another 5 minutes.
  • Remove Buffalo cauliflower from oven, let cool and set aside. Turn oven up to 550℉.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add ranch to pizza, then 1 ½ cup mozzarella cheese, then Buffalo cauliflower, and top with ½ cup mozzarella cheese, pat down.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!

Holy heck, this chicken carbonara pizza is rockin’ but there’s more. And I think you already know… it’s loaded with bacon. Pancetta may be a more common option for a Carbonara but bacon is the star tonight. Bacon. Tied together with that classic carbonara sauce.

All Carbonara’s have pork, but we snuck in some chicken as well, something about chicken and bacon that makes life a little better. All we really needed was chicken and bacon, everything else at this point is just a bonus. And what a bonus a chicken carbonara pizza with bacon truly is. This one talks the talk and walks the walk!

CHICKEN CARBONARA

  • 4 Chicken thighs boneless, skinless
  • 6 strips Bacon
  • 2 Eggs
  • 2 cloves Garlic
  • 1 cup Parmesan Cheese
  • ½ tsp Pepper
  • 1 tbsp Oil

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

CHICKEN CARBONARA

  • Bake bacon in oven on parchment paper lined baking pan at 420 degrees F. for 15 minutes, then flip. Cook bacon an additional 5 minutes, or until cooked (make sure not to overcook it because it will be cooking in the oven for an additional 10 minutes on the pizza). Remove bacon and drain on paper towel lined plate. Let cool, then chop into bite sized pieces, reserve 1 cup.
  • Place chicken on plate. Add tbsp. of oil, salt and pepper, coating both sides of the chicken. Pan roast chicken on medium-high heat 6-8 minutes each side, or until no longer pink inside. Remove from pan, let cool, then chop into bite sized pieces, reserve 2 cups.
  • In a large bowl whisk eggs. Add parmesan cheese, pepper, garlic, chicken and bacon, mix well.

PIZZA

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Chop parsley.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
  • Add chicken carbonara and mozzarella cheese. Pat down the toppings before putting into the oven.
  • Bake pizza at 550 degrees F. for 8-10 minutes, by sliding pizza onto baking steel with pizza peel.
  • Remove pizza from oven with pizza peel. Let cool for 5 minutes. Top with parsley and slice it up!

  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA (8-10 minutes)

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Open can of beans and split evenly into two bowls.
  • Slice four hot dogs into ¼" rounds.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
  • Spread one bowl of beans (½ can), then add mozzarella cheese, hot dogs, and the second bowl of beans (½ can). Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550 degrees F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel. Let cool for 5 minutes.
  • Slice it up!

BACON

  • Preheat over to 420° F. Lay out bacon on a large baking pan, single file.
  • Bake bacon for 15 minutes, flip, and cook for another 5-10 minutes.
  • Remove bacon from oven and drain bacon on paper towel, once cooled, chop bacon.

PIZZA

  • Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Chop lettuce and dice tomatoes.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add mayonnaise, cheese and bacon. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven and let cool for 5+ minutes. Add lettuce and tomatoes. Slice it up!

Buffalo Chicken Pizza

We have taken the classic Buffalo chicken pizza to a new level, by adding all the right things to a plate of buffalo wings, minus those pesky bones. What Buffalo chicken pizza would be complete with not only one dipping sauce, but two! We decided to use ranch dressing as the base and we threw some blue cheese on it. Now this may have gone to far for some but that’s OK, we like to go the extra mile.

Not only does this Buffalo chicken pizza have ranch and blue cheese, but we thought we would need to add a little bit more to really make it official. Normally you would get carrot sticks or celery with your Buffalo wings but we went rogue, we went pepperoncini’s! The clear winner and decided champ for this bad mamma jamma. Who doesn’t like some extra kick on their pizza! So kick some butt and grab a slice of this Buffalo chicken pub style special.

  • Oil and season chicken thighs with salt and pepper. Bake @ 420 degrees F° for 8 minutes each side, or until no longer pink inside. Remove from oven, and let chicken rest 5 minutes. Chop chicken and toss in the sauce.

PIZZA

  • Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Crumble blue cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough. Add Sauce, then cheese, then remaining toppings (removing Buffalo chicken from bowl with slotted spoon). Pat down.
  • Bake pizza in the oven at 550 degrees F° for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5+ minutes.
