The ultimate party starter, a loaded nacho pizza. I don’t really have to say much more, but since you’re here I wouldn’t be a very good host if I left you hanging. Not only have we brought everything great about nachos to a pizza, but we put a dab of sour cream and a pickled jalapeno to boot.

All the classic ingredients have been invited to this rager, we got salsa, nacho beef, cheddar, olives, peppers, onions and just because we can we added a couple cups of mozzarella to tie it all together. Topped with fresh tomatoes and crushed tortillas chips, what more could you ask for.

Ingredients

TOPPINGS

  • 2 cups Nacho beef (instructions below*)
  • 2 cups Mozzarella cheese
  • 1 cup Cheddar cheese
  • 1 cup Salsa
  • 1 cup Tortilla chips
  • ½ cup Black olives
  • ½ cup Tomatoes
  • ¼ cup Orange bell pepper
  • ¼ cup Onion
  • 8 tbsp Sour cream
  • 8 slices Pickled jalapenos

NACHO BEEF*

  • 1 lb Ground beef
  • 1 cup Water
  • 1 tbsp Chili powder
  • 1 tsp Cumin (ground)
  • 1 tsp Salt
  • ½ tsp Black pepper (ground)
  • ½ tsp Paprika
  • ¼ tsp Crushed red pepper flakes
  • ¼ tsp Oregano
  • ¼ tsp Garlic powder
  • ¼ tsp Onion powder
  • 1 tbsp Cooking oil

SOURDOUGH PIZZA DOUGH

  • 2 cups Sourdough starter (active)
  • 1 cup Bread flour
  • 1 tsp Salt

Instructions

SOURDOUGH PIZZA DOUGH (1 hour)

  • 1). Make your dough by mixing the sourdough starter, salt and bread flour together (adding a bit of flour at a time until it takes shape)
  • 2). Knead the dough for 30 seconds, flour lightly as needed or add a little water if it's too dry.
  • 3). Place the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour (the baking steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA

  • 1). Preheat oven to 550°F. with baking steel or pizza stone inside the oven for 1 hour.
  • 2). Dice orange pepper, onion and tomato. Crush tortilla chips into bite sized pieces.
  • 3). Grate mozzarella and cheddar cheese.
  • 4). In large frying pan on medium-high heat add oil and beef, cooking beef until no longer pink. Drain excess fat and add water, chili powder, cumin, salt, pepper, paprika, red pepper flakes, oregano, garlic powder, onion powder and cook until the water has evaporated and the taco beef is nice and saucy. Reserve 2 cups of nacho beef for pizza.
  • 5). Flour surface and roll out dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • 6). Add salsa to pizza, then 2 cups mozzarella cheese, then beef, cheddar cheese, olives, peppers, and onion then pat down.
  • 7). Bake pizza in the oven at 550° F. for 8-10 minutes.
  • 8). Remove pizza from oven with pizza peel and let cool for 5 minutes. Add tomatoes and tortilla chips. Slice it up, then add 1 tbsp of sour cream and 1 pickled jalapeno to each slice.

Wake up and smell the pizza? What morning could be better than starting it with this coffee rubbed beef pizza. Well maybe if it was Saturday morning but that’s only if you work weekdays. And if you don’t work, every day is Saturday! Might be getting a little off track here but the fact of the matter is this pizza rocks.

Weekdays or weekends, in the AM or the PM a coffee rubbed beef pizza will give you a little kick starter you can’t go wrong with. Sweet from the brown sugar but savory from the other herbs and spices in the odd but really tasty coffee rub. Will this replace the morning coffee, no definitely not, but it sure is a nice addition to the ritual.

Instructions

SOURDOUGH PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, salt and bread flour together (adding a bit of flour at a time until it takes shape)
  • Knead the dough for 30 seconds, flour lightly as needed or add a little water if it's too dry.
  • Place the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour (the baking steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA

  • Preheat oven to 350°F.
  • Finely ground 1 tbsp of coffee.
  • In large bowl add ground coffee, brown sugar, paprika, oregano, garlic powder, onion powder, chili powder, salt and pepper. Mix well.
  • Rub roast with oil, then with coffee rub. Let sit for 30 minutes.
  • Preheat cast iron pan to medium-high heat and sear beef 1 minute each side.
  • Bake in cast iron pan (or parchment paper lined baking pan) at 350℉ 20-25 minutes per lb.
  • Remove from oven and let beef roast rest for 15 minutes on cutting board. Thinly slice 2 cups of beef for pizza and set aside.
  • Preheat oven to 550°F (with baking steel or pizza stone already inside the oven)
  • Dice onion and red pepper.
  • Grate mozzarella cheese.
  • Add tomato sauce to pizza, then mozzarella cheese, then coffee beef, red peppers and onions. Pat down.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!

Buffalo Cauliflower Pizza

Awesome flavor with a little kick, this Buffalo cauliflower pizza is just about perfect. Tasty battered and baked cauliflower covered in Buffalo sauce, tangy and hot in all the right places. Did you know that cauliflower is also a type of cabbage?

But what makes this pizza really work is the combination of Buffalo cauliflower with ranch. Ranch, the best sauce in the world and cauliflower, the second best tree shaped vegetable. Broccoli is the first but you already knew that. Not sure if Buffalo broccoli would hold up as well as cauliflower. I guess there’s only one way to find out, but before you do give this pizza a shot because it’s one of our favourite pizzas so far!

Instructions

PIZZA

  • Preheat oven to 450°F.
  • In large bowl add flour, garlic powder, paprika, salt, pepper and milk. Whisk until smooth.
  • Chop cauliflower into bite-sized pieces, removing the core and leaves then add cauliflower to batter and coat evenly.
  • Add cauliflower to parchment paper lined baking pan and bake @ 450℉ for 10 minutes. Flip and bake another 10 minutes. Remove from oven, coat cauliflower with Buffalo sauce and bake another 5 minutes.
  • Remove Buffalo cauliflower from oven, let cool and set aside. Turn oven up to 550℉.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add ranch to pizza, then 1 ½ cup mozzarella cheese, then Buffalo cauliflower, and top with ½ cup mozzarella cheese, pat down.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!

Why you ask would we make a gyoza pizza and what’s wrong with us? Both of these are good questions. But would you believe that it’s actually amazing. Well it totally is. Gyoza are incredible on their own and dipped or drenched in ponzu (we don’t judge) makes them even better.

When you add some fresh green onions, mozzarella cheese and slap it all on a pizza, you got yourself a winner. At first we were a bit concerned about mixing gyoza and mozza but for some strange reason it is delicious. The ponzu does a great job of tying this gyoza pizza together, just make sure you don’t use too much or it will make a mess when baking. We found a 1/4 cup of ponzu is the perfect amount.

  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!

A Tex-Mex tater tot pizza is so much more than just salsa and tater tots… it’s got pickled jalapenos too! Oh yeah, and mozzarella cheese, yummy oeey gooey cheese. We start with a nice layer of salsa, then pre-baked tater tots on a hefty bed of mozza with the kicker, the pickled jalapenos.

Magic happens when you dip a tater tot in salsa so we thought lets bring that together with even more magic, jalapeno and mozza. Now we got ourselves a party, a Tex-Mex tater tot pizza party! And if you don’t want to share this with the rest of your party then leave out some chips and dip and stash this tasty beast away for yourself. They’ll never know!

Shrimp Cocktail Pizza

Ingredients

TOPPINGS

  • 2 cups Jumbo shrimp (deschelled and deveined)
  • 2 cups Mozzarella cheese
  • 1 cup Cocktail sauce *instructions below

COCKTAIL SAUCE

  • 1 cup Ketchup
  • ¼ cup Horseradish
  • 1 tbsp Lemon juice (½ Lemon)
  • 1 tsp Worcestershire sauce

WILD PIZZA DOUGH

  • 2 cups Sourdough starter (active)
  • 1 cup Bread flour
  • 1 tsp Salt

Instructions

SOURDOUGH PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, salt and bread flour together (adding a bit of flour at a time until it takes shape)
  • Knead the dough for 30 seconds, flour lightly as needed or add a little water if it's too dry.
  • Place the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour (the pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • In frying pan on medium-heat add oil and jumbo shrimp cook 1-2 minutes each side, remove.
  • In bowl add ketchup, horseradish, Worcestershire sauce and lemon juice, mix well.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add cocktail sauce, then mozzarella cheese, then cooked jumbo shrimp. Pat down toppings.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Slice it up!
