What is a stretch and fold you ask? Well it’s kind of like kneading but without kneading. A stretch and fold achieves what kneading does. But the main difference is rather than folding and pushing down on dough, you literally stretch and fold it by grabbing one side of the dough and lifting it up and pulling it over. Stretch and folds add air into the dough and it makes it lighter and fluffier when you bake your goods.

This guide is just to show you how to do a stretch and fold, you will have to check your recipe for specifics on how many stretch and folds it needs and how long the rest times are.
Instructions Stretch & Fold:
Grab one side of the dough, while in the bowl, lift and fold over. Quarter turn the bowl and repeat this four times for each stretch and fold.
