Why isn’t my sourdough starter growing? The main reason sourdough starter doesn’t grow is temperature and time. If you have the starter sitting at the right temperature, which is room temperature, and just keep feeding it twice a day, 12 hours apart. It will eventually become an active sourdough starter. You can tell when the starter doubles in size and becomes bubbly.
What is room temperature? Room temperature is 20-22 degrees C (or 68-72 degrees F)
