Bring Sourdough Starter to room temperature by removing from the fridge and leaving on the counter for about 1 hour.
Feed the starter twice a day, approximately 12 hours apart, discarding excess starter when necessary to ensure that you only have 50 grams of starter when you feed. Add 50 grams of water and 50 grams of flour to your 50 grams of Sourdough Starter. Mix well.
That's it! Your Sourdough Starter is fed. You can use some of it to cook with or put it back in the fridge for another week before you have to feed again. If you want to leave it out on your counter then you will have to feed twice a day.
If you have a recipe that needs a lot of Sourdough Starter then you can keep the Sourdough Starter and your discards (in new jars) on the counter and keep feeding the starters until you have the required amount of starter.
