Ingredients

TOPPINGS

  • 2 cups Roast Beef instructions below
  • 2 cups Mozzarella Cheese
  • ½ cup Roasted Onion

SAUCE

  • 1 cup Horseradish Sauce instructions below

WILD DOUGH

  • 2 cups Sourdough Starter active
  • 1 cup Bread Flour
  • 1 tsp Salt

Roast Beef

  • 1 lb Beef Roast
  • 1 Onion quartered
  • 2 cloves Garlic peeled
  • 2 Bay Leaves
  • 1 cup Beef Broth
  • 1 tsp Salt
  • ½ tsp Pepper

Sauce

  • ½ cup Mayo
  • cup Horseradish
  • ¼ cup Dijon Mustard
  • 1 whole Roasted Garlic
  • 1 tsp Salt
  • ½ tsp Pepper

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550 degrees after you finish making your pizza dough)

Roast Beef (1½ hours)

  • Quarter beef and onion, and peel garlic. Add beef, onion, garlic, bay leaves, beef broth, salt and pepper to Instapot and cook on "pressure cook" setting, for 1 hour.
  • Remove beef from Instapot and shred, set aside.

Sauce (1 min)

  • Peel and quarter onion, peel garlic and bake on parchment paper lined baking sheet at 420 degrees F. for 30-45 minutes.
    Chop onions and set aside for pizza, chop garlic and reserve for sauce.
  • Mix together mayo, horseradish, mustard, roasted garlic, salt and pepper.

PIZZA (8-10 min)

  • Preheat oven to 550 degrees F. with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough. Add sauce, cheese, and toppings. Pat down the toppings before putting into the oven.
  • Bake pizza in the oven at 550 degrees F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes.
