PAPA ZA’S KITCHEN
Hollandaise sauce is pretty amazing, it does take a lot of attention but when you taste this good you can be a bit of a diva. Eggs galore, lots of butter and lemon, what more can you ask from a decadent sauce like this.
All this butter may send you to an early grave but hey it’s worth it. Everyone should try eggs Benedict (or an eggs Benny pizza) once and it just not the same without Hollandaise sauce. This is one of the trickier sauces we’ve made but just give it a lot of attention, don’t stop whisking and make sure you use a double broiler so it doesn’t burn.

Hollandaise Sauce

Ingredients
- 4 Egg yolks
- 1 tbsp Lemon juice
- ½ cup Butter
- ⅛ tsp Paprika
Instructions
- Separate egg yolks. Freshly squeeze 1 tbsp of lemon juice. Whisk yolks and lemon juice together in a glass bowl.
- In a pot add a little water and heat to medium. Double broil the glass bowl on the pot and constantly stir the sauce, slowly adding the butter. Whisk until desired thickness, remove from heat and mix in paprika.
