The ultimate party starter, a loaded nacho pizza. I don’t really have to say much more, but since you’re here I wouldn’t be a very good host if I left you hanging. Not only have we brought everything great about nachos to a pizza, but we put a dab of sour cream and a pickled jalapeno to boot.

All the classic ingredients have been invited to this rager, we got salsa, nacho beef, cheddar, olives, peppers, onions and just because we can we added a couple cups of mozzarella to tie it all together. Topped with fresh tomatoes and crushed tortillas chips, what more could you ask for.

Ingredients

TOPPINGS

  • 2 cups Nacho beef (instructions below*)
  • 2 cups Mozzarella cheese
  • 1 cup Cheddar cheese
  • 1 cup Salsa
  • 1 cup Tortilla chips
  • ½ cup Black olives
  • ½ cup Tomatoes
  • ¼ cup Orange bell pepper
  • ¼ cup Onion
  • 8 tbsp Sour cream
  • 8 slices Pickled jalapenos

NACHO BEEF*

  • 1 lb Ground beef
  • 1 cup Water
  • 1 tbsp Chili powder
  • 1 tsp Cumin (ground)
  • 1 tsp Salt
  • ½ tsp Black pepper (ground)
  • ½ tsp Paprika
  • ¼ tsp Crushed red pepper flakes
  • ¼ tsp Oregano
  • ¼ tsp Garlic powder
  • ¼ tsp Onion powder
  • 1 tbsp Cooking oil

SOURDOUGH PIZZA DOUGH

  • 2 cups Sourdough starter (active)
  • 1 cup Bread flour
  • 1 tsp Salt

Instructions

SOURDOUGH PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, salt and bread flour together (adding a bit of flour at a time until it takes shape)
  • Knead the dough for 30 seconds, flour lightly as needed or add a little water if it's too dry.
  • Place the dough in a lightly floured bowl and cover with a towel, set aside for 1 hour (the baking steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

PIZZA

  • Preheat oven to 550°F. with baking steel or pizza stone inside the oven for 1 hour.
  • Dice orange pepper, onion and tomato. Crush tortilla chips into bite sized pieces.
  • Grate mozzarella and cheddar cheese.
  • In large frying pan on medium-high heat add oil and beef, cooking beef until no longer pink. Drain excess fat and add water, chili powder, cumin, salt, pepper, paprika, red pepper flakes, oregano, garlic powder, onion powder and cook until the water has evaporated and the taco beef is nice and saucy. Reserve 2 cups of nacho beef for pizza.
  • Flour surface and roll out dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add salsa to pizza, then 2 cups mozzarella cheese, then beef, cheddar cheese, olives, peppers, and onion then pat down.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Add tomatoes and tortilla chips. Slice it up, then add 1 tbsp of sour cream and 1 pickled jalapeno to each slice.

Holy heck, this chicken carbonara pizza is rockin’ but there’s more. And I think you already know… it’s loaded with bacon. Pancetta may be a more common option for a Carbonara but bacon is the star tonight. Bacon. Tied together with that classic carbonara sauce.

All Carbonara’s have pork, but we snuck in some chicken as well, something about chicken and bacon that makes life a little better. All we really needed was chicken and bacon, everything else at this point is just a bonus. And what a bonus a chicken carbonara pizza with bacon truly is. This one talks the talk and walks the walk!

  • 2 cups Mozzarella cheese

WILD DOUGH

  • 2 cups Sourdough starter active
  • 1 cup Bread flour
  • 1 tsp Salt

CHICKEN CARBONARA

  • 4 Chicken thighs boneless, skinless
  • 6 strips Bacon
  • 2 Eggs
  • 2 cloves Garlic
  • 1 cup Parmesan Cheese
  • ½ tsp Pepper
  • 1 tbsp Oil

Instructions

WILD DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
  • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough)

CHICKEN CARBONARA

  • Bake bacon in oven on parchment paper lined baking pan at 420 degrees F. for 15 minutes, then flip. Cook bacon an additional 5 minutes, or until cooked (make sure not to overcook it because it will be cooking in the oven for an additional 10 minutes on the pizza). Remove bacon and drain on paper towel lined plate. Let cool, then chop into bite sized pieces, reserve 1 cup.
  • Place chicken on plate. Add tbsp. of oil, salt and pepper, coating both sides of the chicken. Pan roast chicken on medium-high heat 6-8 minutes each side, or until no longer pink inside. Remove from pan, let cool, then chop into bite sized pieces, reserve 2 cups.
  • In a large bowl whisk eggs. Add parmesan cheese, pepper, garlic, chicken and bacon, mix well.

PIZZA

  • Preheat oven to 550°F with baking steel or pizza stone inside the oven for 1 hour.
  • Grate mozzarella cheese. Chop parsley.
  • Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
  • Add chicken carbonara and mozzarella cheese. Pat down the toppings before putting into the oven.
  • Bake pizza at 550 degrees F. for 8-10 minutes, by sliding pizza onto baking steel with pizza peel.
  • Remove pizza from oven with pizza peel. Let cool for 5 minutes. Top with parsley and slice it up!

Now this was a bit of a sleeper, but wake up, because this poutine pizza will knock your cozy socks right off! You can put your socks back on of course, but don’t take too long or this gravy goodness will be long gone. A beautiful poutine gravy with chicken and beef stock, fresh medium cut fries, baked twice.

And hey wait a darn minute, we can’t forget to talk about the most delicious cheddar cheese curds, also known as Squeak’rs! These little cheese balls tie this whole thing together, plus we added some extra mozza for good measure. Most people have had a chance to chow down on a bowl of poutine, but how many have tried it on a pizza?

GRAVY*

  • 2 tbsp Butter
  • 2 tbsp Flour
  • ½ tsp Pepper

Instructions

WILD PIZZA DOUGH (1 hour)

  • Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
  • Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

FRIES*

  • Preheat oven to 400°F.
  • Peel, rinse and slice potatoes into medium cut fries. Soak potatoes in a large bowl with cold water for 30 minutes, then strain, rinse and dry.
  • Place potatoes onto a parchment paper lined baking pan. Add oil, salt and pepper and mix well. Bake for 1 hour @ 400°F turning the fries once, halfway through. Remove from oven and reserve 2 cups of fries.

GRAVY*

  • On medium heat melt butter in large saucepan, careful not to burn. Add flour and whisk furiously for 30 seconds, still being careful not to burn. Add beef, chicken broth and pepper and whisk until smooth, cook until desired consistency. Remove from heat, let cool slightly and reserve 2 x ¾ cup of gravy.

PIZZA

  • Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour. (Since the oven is preheated from cooking the fries, just preheat until oven is 550°F)
  • Grate mozzarella cheese.
  • Flour surface and roll out the dough, flour lightly as needed. Put a floured pizza peel underneath the dough.
  • Add 1 x ¾ cup gravy, then mozzarella cheese, then fries and then cheese curds. Pat down toppings.
  • Bake pizza in the oven at 550° F. for 8-10 minutes.
  • Remove pizza from oven with pizza peel and let cool for 5 minutes. Top with remaining 1 x ¾ cup gravy. Slice it up!

    • Add oven-safe frying pan to preheated oven and cook for 15-20 minutes, sauce will have slightly thickened. Remove chicken and let cool, then chop. Remove 1 cup of sauce and set aside.

    • Preheat oven to 550 degrees F. with baking steel or pizza stone inside the oven for 1 hour.
    • Grate mozzarella cheese.

    The Weird and Wild Halloween Edition Fried Pumpkin Beef Pizza is about as close to a Pumpkin Spice Latte as Papa Za is gonna get. Pumpkin two ways, a pumpkin cream sauce with pumpkin spices topped with deep fried pumpkin slices.  Frying the pumpkin helps retain the structure and makes sure you get a little something extra with a classic deep fried batter.

    But Pumpkin isn’t the only thing out for Halloween this year, we got some savory roast beef to smother on this pizza laying on a bed of melted mozzarella cheese…..and don’t forget the pumpkin. Layers of spiced pumpkin and beef bring a taste of Halloween and the Fall, maybe Papa Za will get that Pumpkin Spiced Latte after all.

    Ingredients

    TOPPINGS

    • cups Roast Beef instructions below
    • 1 cup Fried Pumpkin instructions below
    • 2 cups Mozzarella Cheese grated

    SAUCE

    • 1 cup Pumpkin Cream Sauce instructions below

    WILD DOUGH

    • 2 cups Sourdough Starter active
    • 1 cup Bread Flour
    • 1 tsp Salt

    Roast Beef

    • 1 lb Beef
    • 1 Onion
    • 2 cloves Garlic
    • 2 Bay Leaves
    • 1 cup Beef Broth
    • 2 tsp Salt
    • 1 tsp Pepper

    Fried Pumpkin

    • 1 cup Pumpkin Flesh cubed and sliced thinly
    • 1 Egg
    • ½ cup Water
    • 1 tsp Garlic Powder
    • 1 tsp Onion Powder
    • ½ tsp Cinnamon ground
    • ¼ tsp Nutmeg ground
    • ¼ tsp Cloves ground
    • ¼ tsp Cayenne Pepper ground
    • Oil for frying

    Pumpkin Cream Sauce

    • 1 cup Pumpkin Flesh cooked and mashed
    • ½ cup Heavy Cream
    • 1 head of Garlic roasted
    • 2 tbsp Butter
    • 1 tsp Paprika
    • 1 tsp Chile Powder
    • 1 tsp Salt
    • ½ tsp Pepper ground
    • ½ tsp Cinnamon ground
    • ¼ tsp Nutmeg ground

    Instructions

    Roast Beef

    • Quarter beef and onion, and peel garlic. Add beef, onion, garlic, bay leaves, beef broth, salt and pepper to Instapot and cook on "pressure cook" setting, for 1 hour.
    • Remove beef from Instapot and shred, set aside.

    Fried Pumpkin

    • Break down the Pumpkin.
      Slice a thin piece of pumpkin off of its side and use that side as the base for stability, remove the stem from the pumpkin.
      Half it, quarter it, then clean out all the seeds and insides, scraping off all of the stringy pumpkin bits, and removing any remaining bits of stem.
      Take one of the quarter pieces of pumpkin and cut into 3 strips, then cut 2 inch pumpkin chunks and remove the skin of the pumpkin.
      Slice chunks thinly into ⅛ inch thick pieces, discarding any stringy pumpkin slices.
    • In a large bowl, add egg, water, garlic powder, onion powder, cinnamon, nutmeg, cloves, cayenne, salt and pepper, mix well.
      Add pumpkin slices, mix well, making sure to coat all of the pieces.
      Add oil to large wok or pan and heat to medium. When oil is hot, add pumpkin slices one at a time and do not overcrowd.
      Flipping and stirring frequently, cook 3-5 minutes or until golden brown.
      Remove fried pumpkin slices with a metal slotted spoon, or metal tongs and drain on paper towel.

    Pumpkin Cream Sauce

    • Preheat oven to 400 degrees F.
      Slice the top of the garlic off, add oil and salt. Salt the flesh side of one pumpkin quarter. Roast garlic, uncovered and pumpkin quarter, with the skin side up for 45 minutes, or until fork tender.
    • Remove pumpkin and garlic from the oven and let cool for 1 hour.
    • Remove skin from pumpkin and squeeze out the garlic, and chop.
    • In large pot, melt butter on medium heat, add pumpkin and mash until smooth. Add garlic, cream, paprika, chile powder, cinnamon, nutmeg, salt and pepper, mix well.
      Cook on medium heat for 3-5 minutes, reduce heat to low and cook for 5-8 minutes, or until desired thickness.

    PIZZA

    • Preheat oven to 550 degrees with baking steel or pizza stone inside the oven for 1 hour.
    • Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
    • Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour.
    • Flour surface and roll out the dough. Put a floured pizza peel under the dough.
    • Grate mozzarella cheese.
    • Add sauce, cheese, and toppings. Pat down the toppings before putting pizza into the oven.
    • Bake pizza in the oven at 550 degrees F. for 8-10 minutes.
    • Remove pizza from oven and let cool for 5 minutes.
